CHICKEN UN TURKISH SAUCE


This is probably the chicken recipe I've most frequently done in my entire life. I found it many years ago in a small Turkish recipe book my mom had and it became quite usual in my kitchen. Everyone has enjoyed it a lot each time I've cooked it and in addition it is really easy to do and is terribly good!

Turkish cuisine is very interesting, yummy and varied thanks to the influences it has since it is located in Europe and Asia. The best thing I could bring back from my trip in Turkey were definately the turkish spices most used in their cuisine such as saffronsumaccuminpepper, dried mint leaves...

Called Llahvuk Yahnisi in Turkish, llavuk: chicken breast and yahnisi or yahni: stew or ragout, it is always prepared using extra virgin olive oil, onions, tomatoes and the remaining ingredients you'll find below, however I like giving it my personal touch by adding the black olives that combine so well with this dish.

CHICKEN UN TURKISH SAUCE


INGREDIENTS : 

· chicken legs or thighs, skinless
· 3 onions, chopped
· 10 garlic cloves, chopped
· 500 ml tomato sauce
· 1 can of peeled, sliced tomatoes
· Extra virgin olive oil 
· Butter
· Salt, black pepper and cumin powder
· Fresh parsley
· 1 can of black olives
· Water


INGREDIENTES - CHICKEN UN TURKISH SAUCE


PREPARATION:

1. In a skillet with olive oil and some butter we sauté the chicken until it gets brown. Remove from the pan.
2. In the same skillet without cleaning it we add some oil and sauté the chopped onion and garlic with some salt, pepper and cumin until it gets golden.
3. We add the chicken and stir. Pour the tomato sauce and sliced tomatoes along with some water and set to medium heat until it starts simmering.
4. Add salt, pepper and cumin to taste. 
5. Once it starts simmering reduce to low heat and leave cooking for an hour, stir every now and then.
6. Serve with some white rice or pilaf.

*Little tricks and tips*

-> You can get it done in less time, by making a few cuts to the chicken with a knife and after step 3 leave the heat at medium-high until the chicken is well cooked inside. 

-> Suitable to freeze. 

Substitutions : Make it lactose free by using vegetable spread instead of butter.
