VEGAN KIWI CAKES WITH STRAWBERRY COMPOTE

As you might be aware now it is strawberries season (in Spain). They are so good in any kind of way: with whipped cream, milk and sugar, balsamic vinegar, in smoothies, salads, with orange juice, just natural... And I stop there before I start sounding like Bubba from the Forest Gump movie enumerating his repertory or recipes with prawns...  😁


I really was feeling like using them to elaborate a different dessert so I made this strawberry compote to serve with these little cakes. Besides, kiwi and strawberries make a really good combination. If you like jams and compotes you will love this one, it can be used in so many other different ways from desserts, on toasts, with yogourt, porridge, chia pudding... It is so much healthier than the ones we buy that are full of preservatives and sweeteners or massive amounts of refined sugar. It can be kept in a glass jar in the fridge up to a week. 


VEGAN KIWI CAKES WITH STRAWBERRY COMPOTE


The creamy part is made with cashew nuts, the result is very nice and unctuous with a distinct flavour that is quite surprising. We just need to bare in mind the time we will need to soak them, around 3 hours or ideally overnight. Regarding the dates sometimes they are quite dry and hard depending on the type you buy so we will also soak them a bit with warm water so they soften. 

I like making these cakes in small individual portions using a cupcake tray. The combination of ingredients make it a quite rich dessert, you'll see that just having one feels more than enough. You can keep them in the freezer for a longer period and just allow them to thaw by taking them out around 15-30 (depending on room temperature) minutes prior to consuming.
In order to achieve those beautiful layers I'll explain how to do it  below. If you want to highlight the green colour of the kiwi layer we will use spirulina powder but it is totally optional ;)


So here's the recipe of these vegan kiwi cakes with strawberry compote.

VEGAN KIWI CAKES WITH STRAWBERRY COMPOTE RECIPE


INGREDIENTS: (Makes 8 cakes)

For the compote:

  • 15- 20 strawberries, leafless
  • Juice of 1/2 orange
  • 2 tbsp. maple syrup
For the base
  • 1/2 cup walnuts
  • 10 dates, pitted and soaked in boiled water for 15 minutes.
  • 1 pinch of salt
For the filling:
  • 1 cup raw cashew nuts (soaked for 3 hours or overnight)
  • 2 tbsp. maple syrup
  • 1 tsp. vanilla paste
  • 1tsp. coconut oil, melted (liquid)
  • Some rice milk (or any other)
For the kiwi layer:
  • 3 ripe kiwis, peeled
  • 1 tsp. spirulina powder (optional)
  • Juice of 1/2 lime
  • 1 tbsp. maple syrup

METHOD:

  1. We first make the compote. Cut the strawberries into medium pieces and add to a small saucepan with the orange juice and maple syrup. Bring to a boil.
  2. Poach for around 10 minutes o until you see they are soft. Remove from heat and allow to cool.
  3. We now make the base of the cakes. In a small saucepan boil some water and then leave the dates soaking for around 15 minutes. 
  4. Grind the walnuts along with the dates and the salt until you get a firm paste. 
  5. Use a cupcake or muffin tray previously greased and start putting the base on each mould, apply some pressure.
  6. Place the tray in the freezer while you prepare the rest.
  7. Now we make the filling. Drain and rinse the cashews. Use a blender or food processor to blend with the vanilla, maple syrup, coconut oil and a splash of milk until you achieve a creamy texture. 
  8. Divide the filling in two. 
  9. Take half of the filling and add the sliced kiwis, the lime juice, the spirulina and the maple syrup. Blend until mixed and creamy,
  10. Pour the mixture on each mould. First put the tray in the fridge with the kiwi layer only and leave for around 30 minutes to allow to set. Then add the second layer using the other half filling.
  11. Keep in the freezer at least a couple of hours or until you see it is completely set.
  12. Remove from the freezer 15-30 minutes prior to consuming and serve with some strawberry compote on top.
