You already know I'm a fan of Asian food, specially Thai and Vietnamese cuisine. I love it, and never get tired of eating and tasting all their dishes. This is one of those I've been making for years and I was looking forward to share the recipe.


When I travelled to Vietnam I had the opportunity to attend a cooking workshop of traditional dishes. They showed us how to make two different types of rolls, the fried nems and the fresh rolls. The ability and quickness they had making them was astonishing. There's no doubt I'll never get to do them with that ease but at least I learnt first hand and with my own eyes how they are done so I can make them myself. 

INGREDIENTS


Unlike the typical spring chinese rolls or the vietnamese nems, these are fresh and not fried which makes them way more lighter. They are the perfect healthy appetizer, or for a light and simple dinner, yet with lots of flavour. The herbs as mint and cilantro give a very fresh touch, the carrot and lettuce that crunchiness and of course something that is essential, the dipping sauces. This sauce is quite simple, however there other many options as peanut sauce, mango, super spicy and so on...

The elaboration of the rolls is quite easy if you follow a series of steps. In order to show you how to make them I thought the best way was visually with the step by step pictures. Don't panic, it is totally normal that the first roll looks like a mess. But once you've done it a few times you will become a real roll master. They don't need to be perfect, mine never are, the important thing is that they are done properly so they don't get ruined and you can eat them with no problem.

My advice is that you prepare everything in advance, cut the carrots and lettuce...so you have all the ingredients ready near the surface where you are going to make the rolls. That way it will be easier and quicker. 
So here's the recipe, you'll also find some useful tips at the end of the post.

FRESH VIETNAMESE SPRING ROLLS WITH PRAWNS



INGREDIENTS : (For 10 rolls)



  • 10-12 prawns, peeled, cooked, and cut in 2 (remove the vein/intestins)
  • Some lettuce leaves, washed and dry 
  • 1 carrot, peeled and cut into sticks
  • 10 fresh mint leaves and more to serve
  • 10 fresh cilantro leaves and more to serve
  • 10-12 pieces rice paper for rolls
  • 1/2 package of vermicelli noodles, cooked and chilled

Para la salsa:
  • 1 TBSP. rice vinegar
  • 1 TBSP. brown sugar 
  • 2 TBSP. sesame oil
  • 1/2 tsp. hot sauce Sambal Oelek, Sriracha or other, or chopped red chillies.
  • 1 TBSP. toasted sesame seeds
  • 2 TBSP. fish sauce (Nuoc Mam, Nam Pla...)

ELABORATION

  1. Get all your ingredients ready and chopped and place them next to the surface where you will be making the rolls.
  2. Place a clean and damp kitchen cloth, this is very important to avoid your rolls getting stick. Have a large bowl with warm water ready and introduce the rice papers one by one, they will be cooked in a few seconds. Don't leave them too long because they will get spoiled. 
  3. Place over the cloth and follow the steps shown in the pictures below. You can add more mint or coriander but don't overload it or it will be hard to roll it. I only use one prawn per roll, I cut them lenghtwise as you can see in the photos. 
  4. Place them on a plate (*read the tips at the end of the post).
  5. Now make the sauce: pour the vinegar and add the sugar, stir well until diluted and then add the spicy sauce (amount to your taste), fish sauce, sesame seeds and the sesame oil. Mix all well and serve in one or more bowls.

*Little tips and hacks*
  • Once the rolls are done they might be a little sticky so in order to avoid them getting stick to the plate, just rub them a bit with some sesame oil.
  • If you or anyone else doesn't like spicy food, instead of including it in the sauce just serve it in a bowl appart so each person can use it as they like, as well as some mint and cilantro leaves.
