I know, it was about time I posted a sweet recipe, so here I am bringing this amazing chocolate bundt cake that is to die for. And I'm not bluffing, I have witnesses that can confirm it. The recent cloudy and rainy days where the perfect occasion to turn the oven on and start baking all kind of stuff before the really hot days come back.



After many tests and changes on the recipe I finally got to find he ultimate super cake. Initially the recipe was just like that with no chocolate chunks but a friend suggested the idea of adding some chocolate chips. Then I thought why not try adding some dark chocolate chunks just chopped like that. So that's what I did and the result is an intense chocolate cake, spongy but dense at the same time, whith chocolate chunks melting... What else can I say.

The only inconvenient you might encounter elaborating this recipe is the anxiety and excessive excitement you may feel while you wait until the cake cools down. After removing it from the oven you must wait 10 minutes before you turn it over, then another 10 minutes after you turn the mold over...and finally unmold it and wait at least another long 10 minutes to allow it to chill before you eat it. Maybe the longest minutes of your life. :D

And finally the big moment arrives and you cut a slice of the cake and everything will have been worth it. You'll want to devour it all at once with no pause. 

Ok so no more jokes now, let's continue with the recipe of this intense chocolate bundt cake, gluten and dairy free

INTENSE CHOCOLATE BUNDT CAKE RECIPE


INGREDIENTS : (Classic Nordic Ware 26cm mold)


  • 2 cups. gluten free flour (I use Schär Dolci Mix) 
  • 1/2 c. chestnut flour
  • 1/2 c. rice or coconut flour 
  • 1 c. brown sugar 
  • 3/4 c. pure cocoa powder  
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. xanthan gum
  • 2 c. 1/2 rice or almond milk 
  • 1/2 c. sesame oil
  • 2 large eggs 
  • 1 tsp vanilla paste
  • Icing sugar 
  • 1/4 tsp nutmeg powder
  • 2 cloves, milled
  • 1/2 dark chocolate bar

ELABORATION:


  1. Preheat the oven to 180ºC and place the chocolate bar in the freezer while you make the dough.
  2. In a bowl mix all dry ingredients: flours (sifting them), sugar, cocoa powder, baking powder, baking soda, salt, xanthan gum and the spices.
  3. Use another bowl to mix all wet ingredients: the milk, oil, eggs and the vanilla.
  4. Add gradually the dry ingredients using an electric mixer to combine.
  5. Chop the chocolate bar into small chunks, then add them to the mixture and stir with a spatula.
  6. Grease and flour the mold, ensuring you cover the whole surface. 
  7.  Pour the dough into the mold and place in the oven tray.
  8. Bake for 40 minutes or until a wood stick comes out clean.
  9. Remove from the oven and set on a cooling rack for 10 minutes. Then turn the mold over and wait another 10 minutes. Then unmold and wait 10 minutes before you eat it.
  10. Sprinkle some icing sugar and enjoy!
