Halloween is just around the corner... it is time for sweets, tricks, treats and witches and I couldn't let this week pass without a sweet recipe made with pumpkin!
I was taking too long to post a recipe including it, pumpkin is one of my favourite autumnal-wintery ingredients... Here you have an american classic very typical during the fall: pumpkin spice latte :)
INGREDIENTS:
· 2 cups sliced, peeled pumpkin
· Black coffee
· Cinammon, nutmeg and ginger powder
· Almond milk
· Honey
· Whole cane sugar
· Water
PREPARATION:
1. In a small saucepan put the pumpkin with a bit of water, a pinch of cane sugar and the spices: 1 tsp cinnamon, 1/2 tsp nutmeg and 1/2 ginger, or more to taste.
2. Cook at medium heat stirring from time to time, for 20 min. or until it is well cooked.
3. Use a blender to make a thin purée.
4. Heat the almond milk, make some foam if you have a milk frother.
5. Pour the freshly made coffee in a mug with 2 or 3 tbsp of the pumpkin purée and 2 tbsp of honey, and stir well. Add the milk and froth.
Sprinkle some cinnamon and nutmeg powder.
*Little tricks and tips*
Substitutions: Instead of honey use agave syrup, Stevia or cane sugar.
> You can always use decaf coffee or chicory if you don't like coffee.
