SAVOURY MUFFINS WITH OLIVES, TOMATO & AROMATIC HERBS



Yes, they are what they look like, muffins, but savoury! A slightly different way of eating them and also surprising as their flavour really reminds of pizza! No need to talk about the smell when they are baking!!

With the mediterranean flavours of the tomato and the olives, along with the aromatic herbs as oregano, rosemary and thyme, and the final spicy touch of the chipotle smoked salt… sounds (you’ll see that also tastes) great, doesn’t it?!

I’ve been willing to make savoury muffins for months but honestly during summer when it is so hot outside, using the oven is one of the last things you want to do… Now it is real fall , with its chilly and  shorter days it is when we get excited about baking at home. I had a few ideas in mind that I already tasted before but when I received the box from Raw Spice bar (flavour kits to receive monthly with 3 different spice mixtures from the world) I thought about using some of them for my savoury muffins recipe. So the mix of spices include: chipotle smoked salt (you can replace with regular salt with cayenne pepper or smoked paprika) and on the other hand a mix of sundried tomatoes, garlic, Mexican and Californian Chiles, cayenne pepper, black peppercorns, onion, oregano, rosemary and thyme. You can play with the quantities depending on your preferences whether you like it more or less spicy. Finally, I used a vegan cheese but feel free to use the cheese of your choice.

SAVOURY MUFFINS WITH OLIVES, TOMATO AND AROMATIC HERBS

INGREDIENTS: (Makes 12 muffins)
  • 150 gr. gluten free flour (or any other)
  • 100 gr. almond flour (or very thin ground almond)
  • 1 tsp. baking powder (gluten free or regular)
  • 200 gr. cherry tomatoes, chopped
  • 50 gr. black olives, pitted and chopped
  • 4 large range eggs, slightly beaten
  • 3 tbsp. extra virgin olive oil
  • Mix of spices: sundried tomato, onion, garlic, chiles, cayenne and black pepper, oregano, rosemary and thyme
  • Chipotle smoked salt
  • Water to mix
  • 100 gr. vegan mozzarella or the cheese of your choice
  • Some thyme to sprinkle

ELABORATION
  1. Preheat the oven to 200ºC.
  2. Mix in a bowl the dry ingredients first: the flours, baking powder, salt, spices and herbs, and stir.
  3. Then add the rest of the ingredients: chopped tomatoes, olives, cheese, the eggs slighly beaten, olive oil and combine all well. (Keep some tomato and olive pieces to garnish)
  4. If it is very dry or hard to mix add one or two spoons of water to help combining. 
  5. Line a muffin pan (or individual molds) and use 2 paper cases for each muffin and spoon the batter.
  6. Then put some tomato, olive and cheese pieces on top and sprinkle some thyme.
  7. Place in the oven and bake for 30-35 minutes or until you insert a toothpick in the middle of the muffin and it comes out clean.
  8. Remove from the oven and leave on a cooling rack for a while.
  9. Ready to eat!
