This is without a doubt the best moment to gorge yourself on seasonal strawberries. They are everywhere, good value, they are super healthy and scrumptious. Loaded with antioxidants and vitamins, low in calories and a high content in water, this fantastic fruit can also quench your appetite.
It is definately worth buying a big case of strawberries so you can freeze them for your recipes: smoothies, juices, smoothie bowls, jams…and use them when they are out of season.
There’s no secret I am a coconut lover, I use it a lot and like it in any possible way wether it is fresh, dry, milk, on sweet and savoury dishes…it is delicious and exotic. Yes, it is a bit more caloric than strawberries but perfect for this nutritious bowls, excellent for breakfast or as a snack, even as a dessert.(You’ll find a video with how to open a coconut easily in “Little hacks and tips”at the end of the post).
The smoothie bowl is basically a thicker smoothie to eat in a bowl with a spoon. Some toppings are usually added like fresh fruit, seeds, nuts, muesli… or anything you like. This is the perfect excuse to pamper yourself while eating the recommended daily fruit amount in a different way and enjoy something healthful with no rush.
INGREDIENTS: (for 2 big bowls)- 1 coconut
- 8 fresh strawberries
- 12 frozen strawberries
- 1 frozen banana
- 4 tbsp. almond milk
- 2 tbsp. maple syrup
- 1/2 tbsp. ground flax seeds
- 1 tbsp.virgin coconut oil
- Toppings: goji berries, black sesame, maple sugar, fresh coconut shredded…
ELABORATION:
- Open the coconut and remove all the juice and meat.(video at the end of the post).
- Set aside 2 or 3 fresh strawberries for the toppings.
- In a blender or processor (I use Thermomix) blend the coconut meat and juice along with the fresh and frozen strawberries, the banana, almond milk, maple syrup, ground flax seed, coconut oil until you get a creamy texture. Add more or less milk depending on the thickness you desire.
- Serve on a bowl and add the toppings you like and… enjoy it!
