After last week's cake now it's time for a lighter and healthy recipe. You will be pleased to know it is even healthier than it looks because this vegetable chips aren't fried but baked, therefore a healthful, easy and yummy snack to eat with no limit! It is a great alternative as an appetizer to make at home for a relaxed plan watching a movie. I recommend you make a good amount as once you start eating them...it's hard to stop. 

First of all let's talk a bit about the kale for those who don't know it yet, however I'm sure you have heard about since it is so trendy these years. The kale is a type of cabbage with a curly leaf with many health benefits. It is considered a super food as it contains more iron than meat and more calcium than cow milk, in addition to being an important source of folic acid, fiber and lots of vitamins and minerals. It also has antioxidant properties and is very low in calories, reason why in part it has become so famous. It is most commonly use in green juices and smoothies as that is the best way to take advantage of its nutrients, however it can be eaten in any way: raw, cooked, fried... 
As said, at this occasion we will be using them to make oven-baked healthy crisps. If you follow the easy steps you will be surprised how amazingly crunchy they get and of course how yummy they are!!

On the other hand we will make as well purple potato chips to add some more colour. It is more about the look and presentation, there is no difference in terms of flavour so you can use any type of potato if you are unable to find these. The key is to cut them very thinly and dry them properly before baking them so they get really crunchy

Regarding the wasabi dip, you can use wasabi paste as I used or wasabi powder. I have to say that the one I used wasn't very spicy so I added some cayenne pepper to add that some more hotness. 

So here we go with the recipe for these kale and purple potato chips with a wasabi dip.

KALE AND PURPLE POTATO CHIPS AND WASABI DIP RECIPE

INGREDIENTS

  • Kale leaves
  • Purple potatoes or regular potatoes
  • Extra virgin olive oil
  • Fine pink Himalayan salt
  • 5 tbsp. mayonnaise
  • 1/2 tsp. lemon or lime juice
  • Wasabi paste/ or powdered
  • Cayenne pepper

ELABORATION:




  1. Preheat the oven to 150ºC.
  2. We will first prepare the kale chips as they need less baking time.
  3. Pick a few good greeny bunches and wash them. Dry them well, you can use a salad spinner and then finish drying them with some kitchen paper. This step is very important in order to get them crunchy.
  4. Cut them and keep the leaves, remove the stems (you can use them for a soup for example)
  5. Put all the leaves in a bowl and drizzle some olive oil, season with salt and mix well with your hands, making sure it gets over all the leaves so they don't get burnt when baking them.
  6. Set an oven tray with some baking paper and put the leaves all over it ensuring you don't pile them up.
  7. Reduce the oven to 130ºC and place the tray in the oven. Cook for around 15-20 minutes until they get golden (depends on the oven so watch it to make sure they don't burn).
  8. In the meantime we can prepare the potatoes. Peel them and use the peeler to make very thin strips.
  9. You can place them on top of kitchen paper as you make them so it absorbs the water and then finish drying on top with some more paper. This step is crucial to get your potatoes really crispy.
  10. Same as with the kale put them in a bowl and drizzle some olive oil and salt, making sure all of them are well covered. 
  11. Place them in an oven tray with baking paper and spread them without piling them up.
  12. Remove the kale chips when they are ready and set the oven to 180ºC.
  13. Place the tray with the potatoes and bake for 15-20 minutes, until they get golden (you'll need more or less time depending on the oven, so stay vigilant and make sure they don't get burn or overcooked).
  14. Meanwhile we make the wasabi dip. Mix the mayonnaise, the lemon juice, wasabi paste (quantity to taste), a pinch of salt and a pinch of cayenne pepper (optional). Combine well. 
  15. Once the potatoes are done, remove from the oven and serve along with the kale chips and the wasabi dip.
