COFFEE AND COCONUT POPSICLES



If you haven't tried the coffee-coconut combination before I strongly recommend you do. They are like the perfect couple. The union of the gustatory goodness.What else you can ask for. If you as well are obsessed with the coconut and also love coffee, you'll love it. 
Very good to drink cold or like this ice pop version, so appetizing during the hot days.

You can make them totally homemade by preparing your own coconut milk. The method is very easy, I showed you how to make it recently on my tropical granita recipe that you can find here. If you rather making it faster you can use canned coconut milk, the flavour will be more intense and the texture more creamy.

Regarding the coffee, my advise is to make a really good one, and if you use an italian coffee maker, even better. You'll notice the difference. 

Making homemade popsicles is the simplest and fastest thing to do. You just need to hold your anxiety a bit while you wait when they are in the freezer.

COFFEE AND COCONUT POPSICLES

INGREDIENTS: (Makes 4 popsicles)


  • Homemade coconut milk or 1 can of coconut cream/milk
  • Espresso coffee (about 2 cups)
  • Maple or agave syrup (to taste)
  • Dry shredded coconut (optional)

METHOD

  1. First make the coffee so it has time to cool. Use the sweetener of your choice.
  2. Make the coconut milk following this recipe.
  3. Get the ice pops moulds ready and some wood or plastic sticks. Pour the coffee when it's cold and add the coconut milk.
  4. Place in the freezer for at least 3 hours. After one hour you can introduce the sticks. You can also sprinkle the shredded dry coconut at this point. 
  5. Once the freezing time is over, take them out of the moulds and enjoy!

+ LITTLE TIPS AND HACKS +

In order to take out the popsicles from the moulds easily you can pour some warm water over them (with the moulds upside down) and they will come out quickly.
