Last Christmas I talked about how I like giving homemade food as a gift. I find it nice, different and authentic. The person that receives it appreciates it even more when it's made by yourself and 100% homemade, don't you think?

This year I wanted to make something with chocolate, it had been a while since I made homemade truffles and I also wanted to find a healthier version with no refined ingredients nor much sugar. So I found the perfect allied with dates, they sweeten reasonably and add a creamy texture with a nice caramel-like flavour. You can use any chocolate but I like it intense so I use dark chocolate and do not add any sugar.

As a topping we can use any kind, I've used grated coconut, pure cocoa powder, purple corn powder and matcha tea to add some colour. You could also use chopped pistachios, sesame seeds.... 

If you want to offer them as a gift you just need a glass jar with a lid, fill them with the truffles, close and tie a ribbon or cords. Offering chocolate is like giving love, don't you think? :D
Plus, they're perfect as a sweet treat to have along with a nice coffee or tea at your family celebrations. 

With these quantities you'll have around 45 truffles and as you will see below the steps are quite easy. So here we go...

INGREDIENTS



  • 300 gr. dark chocolate 75 or 80%
  • 10 medjoul dates, pitted
  • 1 tbsp. coconut oil, melted
  • Pure cocoa powder 
  • 1/2 tbsp. vanilla paste
  • 1 pinch of pink Himalayan salt
  • Some rice or almond milk 
  • Toppings: ground hazelnuts, shredded coconut, matcha tea, purple corn powder...

ELABORATION
  1. Use a food processor to mash the dates. Add a little bit of milk if needed to help blending until you get a creamy texture.
  2. Melt the chocolate and add the salt and vanilla.
  3. Remove from heat and allow to cool a bit.
  4. Pour into a bowl and add the dates paste and the melted coconut oil. Mix all well.
  5.  Pour over a squared pan or you can keep it in that same bowl in the fridge for about 1 hour.
  6. When you take it out it should be quite hard, that is what we need to make the truffles. We will use a spoon and then roll the balls with our hands, you can use some cocoa powder to avoid them sticking.
  7. Then roll them over some bowl with the toppings and they're done!
