Now that it’s summer and we’re enjoying good weather there’s nothing more appetizing than a light and fresh dish; since the beets from my little garden are ready to eat, the idea of a very tasty, healthy and easy to do salad comes up.
The fennel has an anise-like flavour that combines very well with the earthy beets and the mint together with the lime give a very refreshing touch!
INGREDIENTS (Serves 2)
· 2 cooked and peeled beetroots
· 1/2 red onion
· 1/2 fresh fennel bulb
· 125 gr. feta cheese
· 5/6 mint leaves
For the dressing:
· 1 lime
· 4 spoons of extra virgin olive oil
· Salt and pepper
· Lime zest for garnishing
INSTRUCTIONS:
· 1. Wash the beetroots and the fennel with fresh water. Slice the beets into triangles and the fennel into very thin strips.
· 2. Chop the onion ant the mint.
· 3. Cut and crumble the feta cheese. Place everything in a bowl.
· 4. In a small bowl prepare the dressing: squeeze the lime, add the extra virgin olive oil, season with salt and pepper to taste and mix it up.
· 5. Mix all ingredients with the dressing in the bowl, serve on a platter, sprinkle some lime zest and... ready to eat!
*Little tricks and tips*:
· Try adding some pumpkin seeds to this recipe ;)
· I highly recommend to use an apron while cutting the beets, the stains are really not easy to remove!
