At first glance the celeriac doesn’t exactly look very appealing… it is a little strange amongst other vegetables since it is not easily found in every market, but if you are lucky to find it it is worth buying it!
The celeriac is an edible root with a light celery flavour but more subtle and sweet. It can be eaten either raw or cooked however I recommend trying it raw so you can feel the delicate and crunchy touch as in this celeriac salad. It is very popular in the Northern Countries and France where it is used for the well-known “céleriac remoulade”.
The red apple adds a sweet and crunchy twist to the salad (any sweet apple works fine) and this creamy dressing similar to the classic “remoulade” but a bit smoother and lighter goes brilliantly with it.
With just a few ingredients… easy, fast and delicious.
SALAD INGREDIENTS (Serves 4):
- 1 big celeriac, peeled
- 1 red apple
- 20 walnuts, chopped
- Parmesan cheese, grated (optional)
FOR THE CREAMY DRESSING :
- 4 tbsp mayonnaise
- 3 tbsp Dijon mustard
- 5 tbsp extra virgin olive oil
- 1 tbsp dried tarragon
- Chives, chopped
- Salt and black pepper
PREPARATION :
- Cut the celeriac previously peeled into thin slices and then sticks.(You can also grate it but it would lose its crunchiness)
- Peel and cut the apple also into thin sticks.
- Prepare the creamy dressing mixing the mayo, mustard, olive oil, tarragon, some chopped chives and add salt and pepper to taste.
- Mix up everything: celeriac, apple and walnuts together with the dressing and serve with some grated parmesan (optional).
* Little tricks and tips *
If you can’t find celeriac try replacing it with swede, white or green cabbage.
