Christmas is just around the corner and we already started planning our festive menus. Like in every big family feast various snacks and appetizers must always be present and although we all love the classic ones, different and surprising stuff on the table is always appreciated.
I suggest this creative and pretty idea that can either be served as a starter or at the end of the meal since it is a sweet and salty mix.
The elaboration is really quick and simple therefore does not need to be prepared in advance. They taste great with any kind of nut so you can use the ones you like the most; I used rosted pine nuts, pumpkin seeds and black and golden sesame seeds. You can eat them just like that or spread it over a cracker. I hope you enjoy this goat cheese balls with pineapple and nuts!
INGREDIENTS :
· 1 goat cheeseroller
· 1 can sliced/chopped pineapple, strained
· Ground almonds
· Pine nuts, pumpkin seeds and sesame seeds
· Dried thyme and oregano
· Salt and black pepper
· Maple syrup
PREPARATION:
1. Cut and remove the crust of the cheese keeping all the soft part and set aside.
2. Mash the pineapple using a fork and strain all the liquid.
3. Add the cheese and mix well.
4. Pour 1 tbsp of maple syrup, 3 tbsp ground almond, 1 tbsp thyme, 1 tbsp oregano, season with salt and pepper to taste and blend all well.
5. Grind the pine nuts and pumpkin seeds.
6. Form small balls with the cheese mixture, cover them with the nuts and done!
