COLD MELON SOUP WITH CRISPY HAM 1

It's quite interesting the amount of different types of melons that exist, their origin and versatility, and how well they combine with something salty. I chose this type called honeydew (yellow on the outside, green on the inside) because it's quite sweet and has lots of flavour, therefore the crispy cured ham adds to it a very nice touch of saltiness.


Since I love to mix fruits and vegetables, this week I  suggest a soup that is quite different. The elaboration is really quick and simple and you don't need many ingredients. You can naturally always use any other kind of melon

INGREDIENTS (For 2):

· 1 honeydew melon
· 1 cucumber
· 1 orange
· 1/2 lemon
· 1 soy yogurt (125ml)
· 5 mint leaves
· Pink pepper and salt
· Extra Virgin Olive oil
· 2 slices of cured ham

You will need to make the crispy ham: 

Kitchen paper and a microwave.

COLD SOUP PREPARATION:

1. Cut the melon in two pieces. Discard the seeds and take out all the pulp.
2. Peel the cucumber partially.
3. Squeeze the orange and the 1/2 lemon.
4. Place all ingredients on a mixer along with the soy yogurt, a dash of extra virgin olive oil and the mint. Season with pink pepper and salt to taste. Blend everything up until it gets creamy.
5. Serve on a bowl with the crispy ham.

HOW TO MAKE THE CRISPY CURED HAM 

You just need two pieces of kitchen paper. Take the firt piece and place the ham on top of it; cover with the second piece of paper. Place in microwave for 1 minute at maximum heat. Once it's done, take it out, remove the paper and your crispy ham is ready!

This soup taste even better if you let it rest in the fridge a few hours or even a day... ;)
