Now for real, Halloween is right around the corner!! Have you already plotted a spooky plan and pick a monstrous costume for a really creepy evening??!!
Like last week I suggest another sweet and delicous Halloween treat that I prepared with Crímenes de la Moda (Crimes of Fashion blog) and you can watch the video (in spanish) that we made together here. These are mini pumpkins with chocolate pudding filling, a surprising dessert that makes a cute table pretending they are small pumpkins.
If you haven’t figured out yet how to celebrate this night of witches and phantoms I suggest once again you have a look at the web Oh my fiesta where you will find lots of ideas with free printables to make funny activities with kids, like composing a mask, wrapping candy bags and decorating your table with Halloween candles.
Here’s the recipe for these adorable mini pumpkins with chocolate puddding filling. Have a very spooky night!! :D
INGREDIENTS: (Serves 8)
- 8 medium mandarines/tangerines
- 1 dark chocolate bar for melting
- 400 ml. almond milk
- 30 gr. cornstarch
- 2 eggs
- Fresh mint leaves
ELABORATION:
- In a saucepan heat 300 ml of the milk with the chocolate until melted.
- In a bowl, beat the eggs with rest of the milk where we dilute the cornstarch previously. Stir well.
- Pour in the saucepan with the milk and molten chocolate while we stir from time to time until it thickens to avoir lumps.
- Remove from heat and let cool at room temperature. Then keep in the fridge.
- In the meantime we prepare the mandarines. We cut the top to make a little”cover/hat” of the pumpkin. Empty the interior with a knife and a spoon. (You can keep the pulp and juice for a smoothie or a cake…).
- Make a little hole in the hat to introduce a couple of mint leaves.
- Take the pudding out of the fridge and fill the mandarines.
- Cover with the little covers and serve on a platter.
