We are used to see the avocado being used on savoury dishes pretty much all the time, but this occasion will be an exception and it will be a sweet one. Whether it is for breakfast (this is how I prefer it), as a snack or dessert, this chia and avocado pudding turns out to be really impressive.
The avocado with that super creamy texture along with the maple syrup make the perfect combination. It is addictive. At first sight it may sound weird but it is truly yummy. And on top of that, super healthy too.
Many of us already started introducing chia seeds some time ago. These seeds considered “superfood” are getting more and more popular thanks to their multiple properties. An excellent source of fibre, vegetable protein, calcium, antioxidants, omega 3 acid… and so on with minerals and vitamins. Because of their mild flavour they also are very versatile and can be added to juices and smoothies, for baking, sauces…and a long etcetera.
In the elaboration section I’ll show you how to prepare them, could not be much easier.I encourage you to make this chia and avocado pudding, you’ll be surprised!
INGREDIENTS :
- 2 ripe avocados
- 1/2 glass of rice/almond milk
- 1/2 tbsp maple syrup
- 1 tbsp chia seeds
- Toppings: mint leaves, grated coconut, spirulina algae powder…
PREPARATION :
- Leave the chia seeds soaking for the night in the fridge or at least 30minutes in advance, covering them completely with the milk.
- Use a mixer or Thermomix to blend the avocados with 1/2 a glass of milk and 1/2 tbsp. of maple syrup (or more if you want ir sweeter) until it gets very smooth.
- Pour a layer of the chia pudding into a glass or bowl and then the avocado cream.
- Garnish with shredded coconut, fresh mint, spirulina algae powder…or other toppings of your choice.
*Little tricks and tips*
> If you leave the avocados in the fridge the day before the pudding will be fresher and nicer.
